The Ginger Pig has elegantly trimmed cuts of meat, French cote de bouef or English rib, sausages galore, smoked bacons. Everything is so neatly cut and cared for, it is almost on parade. To the side is a small traiteur dealing in sausage rolls and pies and some salads and made up dishes.

Tim Wilson first started trading in Borough Market in the 1990s from his farm in the Vale of Pickering north Yorkshire. Holly was one of the first Longhorns that started his herd. Although, going further back, Tim was an antique dealer who bought his first farm in Nottinghamshire and brought in some pigs to take over the old stye. Now there are now nine shops, the first of which was Marylebone next door to the La Fromagerie. The accent is firmly on slow grown, welfare and quality. The pork is Tamworth, lamb Dorset and chickens from the Botterill estate in Belvoir being a cross between Cornish, Sussex of Dorking. Plus they have regular deliveries from Rungis in Paris for French birds.
